Overview

As part of a transition to more sustainable healthy diets, there is an increasing need to understand how to communicate the nutritional and environmental impact of food to consumers. This PhD will examine the development of a food labelling index displaying both nutritional and environmental information, and test consumer responses to such an index.

A major transformation of the food system is required, which is focused on the production and consumption of healthy and sustainable food. Change will need to be facilitated through a number of means, including communication of the various impacts of a food in terms of nutrition and environment that is easily understood. The ongoing UKRI and EU funded-projects ‘TITAN’ and ‘SusHealth’ projects are developing codesigned, combined measures of environmental impact and nutritive value (the Sus-Health Index) of foods, meals and ingredients which can be used to influence the future direction of our food system and the stakeholders within it. The resulting consumer preferences (obtained through living lab experiments and through simulation) will feed back down the entire food chain driving the processes and raw materials used, towards more sustainable and health-inducing foods and diets.

The present PhD will (i) build knowledge around the nutritional component of the matrix, testing different nutrient profiling models and what impact these have on the resulting index utilising nationally representative dietary data, (ii) conduct interventions testing use of this index in real world settings (restaurants, fast food outlets, canteens and related supply chains) and (iii) explore consumer acceptance of this index.

The overall PhD aims to align with, and build upon, ongoing funded projects focusing on behaviour change, both of consumers and across the wider food system.

Specific skills/experience required: 2.1 or higher primary degree in relevant area (e.g. Nutrition, Biomedical Science, Human Biology). Good mathematical skills. Experience in dietary assessment methods and/or dataset management.

Funding Information

Applicants for this and a number of other projects will be in competition for studentships funded by the Northern Ireland Department for the Economy (DfE).
Candidates must be normally resident in the UK for the three year period prior to 1 September 2023. For non-EU nationals, the main purpose of residence must not have been to receive full-time education. Non-UK or Irish nationals must also have pre-settled or settled status (EU nationals) or settled status (non-EU nationals).
