VIDEO: What I Eat in a Week as a Student

Medical Student Kathryn takes you on her weekly shop and shares some tips on how you can create delicious meals on a student budget.

Halloumi and couscous

The lunch is from @beatthebudget on Instagram with some modifications-

1 block halloumi 
400g couscous 
2 peppers, sliced
1 onion, sliced
1 avocado, cubed
Parsley for dressing
A few tablespoons natural yoghurt 
800ml vegetable stock 
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon chilli powder 

Directions:

Make up the stock with boiling water in a large bowl, add in couscous and cover, letting soak up the moisture 

Fry up halloumi, peppers and onions with the spices in a pan

Make up into a bowl- couscous base, halloumi and veggies on top, then add garnish, yoghurt (I put mine in a small pot and add it when I eat) and a few bits of avocado on top. 

Mango Curry

The mango curry recipe came to me handwritten from a friend (as many of the best are!) but here it is;

1 tin chickpeas 
1 packet paneer (or 2 chicken breasts if you prefer)
2 peppers, chopped
1 onion, chopped
1 jar of mango chutney (about 300g- the more the better)
1 carton crème fraiche
1 tablespoon curry powder 
1 teaspoon ginger
1 teaspoon turmeric 
Rice to serve 

Directions:

Fry up vegetables in one pan and cook your protein in another (if paneer- fry on both sides until browned)

Add chickpeas and combine vegetables and protein into one pan

Add in mango chutney, crème freshe and spices and then combine all in the pan

 Let simmer on the hob until bubbling

Serve with rice and enjoy!

(Would highly highly recommend this one it’s so tasty)
